Patricias Mince Pies
Hej,
Recipe is:
250g plain flour
125g diced and softened butter
75g caster sugar (normal sugar will do)
1 egg beaten
Finely grated rind of 1 large orange
250g mincemeat
As you have a food processor, you can just put all ingredients in until comes together and then add 1/2 egg only. Without processor, use fingers to mix flour and butter til like sticky breadcrumbs, add sugar and orange rind and then 1/2 egg.
Bring together and flatten til approx 3cm thick and wrap in cling film and leave to chill in fridge for 30mins. Then roll out the dough between 2 sheets of cling film until 1/4 cm thick.
Preheat oven to 200C. Cut out 6cm and 3cm circles and put in mini muffin tray and fill with 1 teaspoon of mincemeat. It is supposed to make 24 pies, but I never get more than 20! Brush the tops with egg and bake for 10-13mins until golden.
Let cool slightly and serve with icing sugar on top!!! Or cream!
We're picking up mincemeat in The English Shop tomorrow and will be busy making pies on Sunday!
